In the mood for veggies

Nu ma pot lauda a fi mare fan salate, insa includ cu mare placere legumele in meniurile mele zilnice. Uneori crude, niciodata gatite pana la descompunere si de cele mai multe ori parpolite cateva minute (si cand spun cateva, sunt chiar cateva: 2-3). Am observat ca in modul asta le diger mai usor si nu-mi dau senzatia de burta umflata, in plus imi dau si o senzatie de satietate mai sporita fiind calde, dar in acelasi timp isi pastreaza intr-o proportie foarte mare proprietatile nutritive.

Cam pe acelasi principiu am incropit si salata aceasta. Cateva anghinare marinate, felii de praz si bostan coapte pe tigaie de fonta, cateva fire de patrunjel, niste capere si, cireasa de pe... salata... bob copt.

Bobul acesta a fost magnific si l-am folosit in multe combinatii. Am fiert boabele, le-am amestecat cu ulei de masline si condimente orientale si le-am bagat la cuptor pana au devenit usor crocante. Pot fi savurate ca gustare, pot fi adaugate la salate sau in loc de crutoane la supe crema.

I can't bounce about saying that I love salads, but with great pleasure I include vegetables in my daily meals. Sometimes raw, never cooked until disintegrated but often grilled for a few minutes (and when I say a few, there are a few: 2-3). I have noticed that in this way I digest them more easily and doesn't give me the feeling of swollen belly, in addition, being hot gives me a feeling of increased satiety, but in the same time preserves the main nutritional properties.

By the same principle, I carve out this salad as well. A few marinated artichokes, sliced leeks and pumpkin cooked on frying-pan, some parsley, capers, and the icing on the ... salad ... baked fava beans.

This fava beans were magnificent and I used them in many combinations. I boiled the beans, mixed them with olive oil and oriental spices and put them in the oven until they became slightly crispy. They can be enjoyed as snacks, can be added to salads or can be used instead of croutons in cream soup.
